Location: Southern Mill – Athens, Ga Job Family: Specialist

Reports To: Sr Manager of Brewing and Cellar Exemption: Non-Exempt

Entry Level

Position Purpose: The Cellar Specialist plays a crucial role in helping people navigate the beautiful and complex world of beer by executing tasks with a high level of quality and contributing to a culture of safety as part of the Southern Mill Cellar Team.

Duties And Responsibilities

Developing Foundational Knowledge of Key Cellar Tasks

  • Gravities, Tank Actions, Crash Times:
  • Record brand data and tank status.
  • Pull samples from FV and prepare samples for Anton Parr 4500.
  • Verify stability and prepare/clear VDK samples.
  • Adjust temperatures on the glycol control panel for tank actions/crashing beers.
  • Carbing and Releasing Beers for Packaging:
  • Perform carbonation readings with IDGM and record readings on tank hangers.
  • Dry Hopping, Fruit, and Adjunct Additions:
  • Select correct hop type, varietal, and weight for dry hopping.
  • Purge hop cannon and breakdown post dry hopping.
  • Purge recirculation pump and set up/document recirculation times.
  • Understand sanitary fruit addition and record all raw ingredients in the data app
  • Yeast Handling:
  • Harvest yeast into kegs/brink, take samples for quality analysis.
  • Weigh kegs, label appropriately, perform yeast entry in the app, and update whiteboard with yeast information.
  • CIP, CIP Skid, Chemicals, and Titrations:
  • Set up and break down all vessels, understand CIP cycles and SOPs.
  • Handle chemicals and titrations and fill out tank hangers and whiteboard to record CIP status.

  • Complete safety training and adhere to all CCBC Safety Guide policies.
  • Advocate for a culture of safety by encouraging peers to comply with safety policies.
  • Knowledgeable of and practices GMP (Good Manufacturing Practices) and performs Preventive Maintenance (PM) as needed.

Culture Of Self-Development & Leadership

  • Participate in and complete leadership development training assigned by the team’s manager.
  • Build and maintain proficiency in using CCBC’s leadership program tools, concepts, and vocabulary.
  • Skills & Competency Development:
  • Learn, understand, and maintain quality cellar initiatives.
  • Maintain competency in safety policies, procedures, and regulations.
  • Explore, connect, and learn about the craft beer industry.
  • Attend and learn about quality in craft beer through sensory classes.
  • Develop technical aptitude on CCBC equipment.
  • Task Excellence & Efficiency:
  • Perform tasks with excellence, focusing on timeliness and process efficiency.
  • Maintain a basic understanding of communication tools such as email and the company communication application, Slack.
  • Stay flexible during production changes, whether foreseen or made with short notice.
  • Report to shifts on time and follow company clock-punch policies and procedures.
  • Operate Centrifuge:
  • Learn to operate the centrifuge and transfer the various brands of beer within the product specifications.
  • Be able to set up centrifuge for CIP and perform CIP.
  • Inline carb operation.
  • DAW addition.
  • Ensure beers are transferred in a timely manner and ready for packaging without delays.

Requirements

  • High school diploma, or equivalent
  • Minimum of 1 year of experience working in a brewery preferred
  • A strong commitment to team and an ability to work together, and communicate well, with others in a demanding and rewarding environment
  • Ability to multi-task in a fast-paced environment and maintain attention to detail while managing time to meet production goals

  • Ability to frequently reach with hands and arms and stoop, kneel, crouch, crawl and climb ladders.

  • Ability to work in hot and cold environments.
  • Ability to work near moving mechanical parts.
  • Ability to work in a moderate noise level (under 85 decibels).
